Vegan Orange Cheesecake
Ingredients:
Pecan nuts
1250 gr
toasted
Dates, dried
500 gr
Coconut oil
200 gr
desiccated and toasted
Salt
pinch
Cashew nuts
1.25 kg
Orange zest &. juice
5
Plus 1ltr of fuice
Agave nectar
600 gr
Coconut Oil
500 gr
melted
Agar agar
10 gr
melted in orange juice
Preparation mode:
- Soak dates for 10 min in hot water and drain
- Transfer to food processor and blitz with pecans, coconut and salt
- Set in the frame
- Cover cashews with boiling water and soak for 3 hours
- Blend cashews and the rest of ingredients in a high speed blender until smooth
- Add melted agar agar while blending
- Pour over crumbs and refrigerate
- Glaze it if desired – use apricot or neutral glaze
