Vegan Orange Cheesecake

Ingredients:

Pecan nuts
1250 gr
toasted
Dates, dried
500 gr
Coconut oil
200 gr
desiccated and toasted
Salt
pinch
Cashew nuts
1.25 kg
Orange zest &. juice
5
Plus 1ltr of fuice
Agave nectar
600 gr
Coconut Oil
500 gr
melted
Agar agar
10 gr
melted in orange juice

Preparation mode:

  1. Soak dates for 10 min in hot water and drain
  2. Transfer to food processor and blitz with pecans, coconut and salt
  3. Set in the frame
  4. Cover cashews with boiling water and soak for 3 hours
  5. Blend cashews and the rest of ingredients in a high speed blender until smooth
  6. Add melted agar agar while blending
  7. Pour over crumbs and refrigerate
  8. Glaze it if desired – use apricot or neutral glaze

Makes one large frame
