Tonka Bean Creme Brûlée

Ingredients:

Cream
1.7 kg
Milk
500 gr
Tonka beans
10
Egg yolks
400 gr
Caster sugar
400 gr

Preparation mode:

  1. Toast tonka beans for 15 min at 150C
  2. Peel and chop, add in to the cream
  3. Bring to boil cream, milk and tonka bean
  4. Combine yolks and sugar
  5. Pour cream over yolks
  6. Stir, don’t whisk it may froth
  7. Pass and set in the oven

Cook 30 min at 105 C, 20% humidity, low fan
