Strawberry Marshmallows

Ingredients:

Dextrose
180 gr
Caster sugar
540 gr
Lemon juice
144 gr
Strawberry Puree
234 gr
Gelatin
36 gr
Glucose syrup
180 gr
Icing sugar and corn flour
50/50
For coating

Preparation mode:

  1. Bring to boil puree, lemon juice, sugar and dextrose
  2. Add bloomed gelatine and bring to boil again
  3. Stir in glucose
  4. Transfer to whisking bowl and whip it until room temp
  5. Pipe or spread on to tray
  6. Let it set, portion
  7. Coat with icing sugar and corn flour mix
  8. Let air dry over night
  9. Re-coat again
  10. Cover, label and refrigerate
