Scones

Ingredients:

Plain flour
2.8
Caster sugar
700 gr
Salt
20 gr
Soda bicarbonate
45 gr
Golden raisins
300 gr
Butter, 3 pounds
1350 gr
unsalted, Must be cold/refrigerated
Eggs

Large
Buttermilk
400 gr
Orange zest
2
Large, 3 small

Preparation mode:

  1. Mix dry ingredients
  2. Add chopped/cubed cold butter
  3. Start crumbling until almost can’t see butter
  4. In a separate bowl mix the rest of ingredients
  5. Pour wet mixture in three parts on the dry ingredients.
  6. Get pastry on the floured table, flatten to the required thickness and cut using ring cutter of you chose.
  7. Bake  at 165C- full fan – bake for 22min (Kingsley)
  8. Bake scones at 165C – 16min (Park)

Footnotes:

For plain scones simply skip the sultanas or raisins.
