Red Wine Poached Pears with Toasted Almonds

Ingredients:

Fresh pears,
100
Cleaned, halved and center removed
Lemon juice
800 gr
Red wine (Shiraz or Merlot)
7 ltr
Caster sugar
3.1 kg
Lemon zest
10
Vanilla extract
Cinnamon
Cinnamon sticks
Cook in wine too use as a garnish
Star anise, whole
Cook in wine, use as a garnish

Preparation mode:

  1. Combine wine, sugar, zest of lemon, vanilla, cinnamon in a large stock pot
  2. Clean pears and bleach with lemon juice
  3. Add pears lemon juice to wine
  4. Simmer until tender

    Cool down, serve
    Garnish with toasted flaked almonds and icing sugar
