Red Wine Poached Pears with Toasted Almonds
Ingredients:
Fresh pears,

Cleaned, halved and center removed
Lemon juice
800 gr
Red wine (Shiraz or Merlot)
7 ltr
Caster sugar
3.1 kg
Lemon zest
10
Vanilla extract
Cinnamon
Cinnamon sticks
Cook in wine too use as a garnish
Star anise, whole
Cook in wine, use as a garnish
Preparation mode:
- Combine wine, sugar, zest of lemon, vanilla, cinnamon in a large stock pot
- Clean pears and bleach with lemon juice
- Add pears lemon juice to wine
- Simmer until tender
Cool down, serve
Garnish with toasted flaked almonds and icing sugar
