Poached Rhubarb – Vegan

Ingredients:

Fresh Rhubarb
1 kg
Cleaned, Sliced
Stock syrup
small amount for sous vide
Orange peel
small amount - for infusion

Preparation mode:

  1. Sous vide at 62C for 45 min
  2. Once cooked remove to ice cold water bath
