Pistachio Parfait

Ingredients:

Egg White
250 gr
pasteurized
Caster sugar
270 gr
Fresh cream
1.4 kg
semi whipped
Pistachio paste
100 gr

Preparation mode:

  1. Make meringue with egg white and sugar
  2. Work paste with small amount of meringue until all incorporated
  3. Fold in semi whipped cream
  4. Spread mixture evenly in the frame
  5. Freeze
  6. Slice
  7. Wrap individually
  8. store in air tight container in freezer
