Pineapple Crisps

Ingredients:

water
500 gr
Caster sugar
500 gr
Glucose syrup
100 gr
Fresh pineapple
2
Star Anise
5 stars

Preparation mode:

  1. Cook stock syrup with star anise
  2. Prep Pineapple : peel, slice in to 1-2mm discs with slicer
  3. Dehydrate at 57 C for 12 hours.
  4. Store in an air tight container.
