Lemon Tart – Vegan

Ingredients:

Desiccated coconut
2 kg
Plain flour
1 kg
Salt
Agave or maple syrup
1.25 kg
Coconut oil, melted
300 gr
water
2.5 kg
Lemon zest and juice
20
Sugar, caster
2 kg
Coconut milk
2.35 kg
Agar agar
60 gr
Corn flour
200 gr
Water
600 gr

Preparation mode:

  1. Mix coconut, flour, salt, syrup and oil until sticky dough
  2. Form tart cases in tins and bake 12-15min at 170C
  3. Cook filling to activate corn flour and pour in to cold tart cases
  4. Refrigerate
