Lemon Tart – Vegan
Ingredients:
Desiccated coconut

Plain flour
1 kg
Salt
Agave or maple syrup
1.25 kg
Coconut oil, melted
300 gr
water
2.5 kg
Lemon zest and juice

Sugar, caster
2 kg
Coconut milk
2.35 kg
Agar agar
60 gr
Corn flour
200 gr
Water
600 gr
Preparation mode:
- Mix coconut, flour, salt, syrup and oil until sticky dough
- Form tart cases in tins and bake 12-15min at 170C
- Cook filling to activate corn flour and pour in to cold tart cases
- Refrigerate
