Italian Meringue

Ingredients:

Caster sugar
1.4 kg
Water
1 gr
Glucose syrup
200 gr
Egg Whites
700 gr
Cream of tartar
5 gr

Preparation mode:

  1. Start cooking sugar on high
  2. Start whipping whites with cream of tartar on speed 2.
  3. Pour sugar slowly and steady.
  4. Switch to speed 3.
  5. Keep whipping until meringue cools down
