Greek Yogurt Espuma

Ingredients:

Greek style yogurt
600 gr
Icing Sugar
60 gr
Proespuma Cold by 'Sosa'
60 gr
xanthan gum
2 gr

Preparation mode:

  1. Blitz everything with hand blender
  2. Strain to make sure no lumps left
  3. Transfer into espuma gun
  4. Charge twice
  5. Refrigerate
