Focaccia bread

Ingredients:

Strong flour/T65
2 Kg
Olive oil
40 gr
Salt
40 gr
Caster sugar
40 gr
Water
1200 gr
Blood temperature
Fresh yeast
60 gr

Preparation mode:

  1. Mix dry ingredients with oil
  2. Dissolve  yeast in water, pour over dry mix
  3. Mix/knead for 7-10min
  4. Prove covered
  5. Divide by 800gr (Park)
  6. Shape, prove
  7. Do some markings on the surface,  sprinkle with olive oil and sea salt flakes/crystals (pref. Maldon)
  8. Bake focaccia bread at 170C for 20 – 25min
