Dehydrated Apple Crisps

Ingredients:

Apple
5
Cold water
500 gr
Ascorbic acid
2 tsp
Water
600 gr
Caster sugar
500 gr
Glucose syrup
100 gr

Preparation mode:

  1. Use whole, unpeeled apples
  2. Slice with slicer. Set thickness at mark 1.5 ( 1-2mm)
  3. Rinse in sour water for 5 min (500 gr cold water 2 tsp ascorbic acid)
  4. Transfer in to cold stock syrup bath ( 600 gr cold water  500 gr caster sugar, 100 gr glucose syrup)
  5. Line on dehydrator trays
  6. Dehydrate over night
  7. Store in an air tight containers
