Creme Brulee

Ingredients:

Cream
1.7 kg
Milk
500 gr
Vanilla
1 pod
Egg yolks
400 gr
Caster sugar
400 gr

Preparation mode:

  1. Combine yolks and sugar
  2. Bring to boil cream, milk and vanilla
  3. Pour cream over yolks
  4. Stir, don’t whisk it may froth

Cook 30 min at 105 C, 20% humidity, low fan
