Coffee Cake Sponge for Afternoon tea

Ingredients:

Caster sugar
2040 gr
Vegetable oil
1800 gr
Buttermilk
1200 gr
Instant coffee powder
50 gr
Vanilla extract
3 tbls
Eggs
12
large
Plain flour
2520 gr
Soda bicarbonate
3 tbls
Vinegar
6 tsp

Preparation mode:

  1. Whip sugar, oil, buttermilk, eggs, coffee powder and vanilla
  2. Add flour
  3. Combine vinegar and soda, add to the batter
  4. Mix well
  5. Divide into 7 gastro size trays
  6. Bake at 150 C for 20 min, zero humidity and low fan
