Coffee Buttercream for Opera

Ingredients:

Egg yolks
480 gr
Sugar, caster
1 kg
Butter, unsalted
1.1 kg
room temp
Coffee extract
2 tbls

Preparation mode:

Makes 1 large frame

 

  1. Make sabayon with yolks and sugar
  2. Add butter in three stages,

 

Make sure sabayon still hot before adding butter
