Coffee Buttercream for Opera

Egg yolks

Sugar, caster
1 kg
Butter, unsalted
1.1 kg
room temp
Coffee extract
2 tbls
Preparation mode:
Makes 1 large frame
- Make sabayon with yolks and sugar
- Add butter in three stages,
Make sure sabayon still hot before adding butter
