Coconut Creme Caramel – Banh Gan
Ingredients:
Caster sugar
2250 gr
Water
800 gr
Coconut milk
4 kg
Milk
3750 gr

Brown sugar
1 kg
Vanilla powder
Desiccated coconut for garnish
Lime zest for garnish
Preparation mode:
- Make light caramel with 2250 gr sugar and 800 gr water
- Pour on the bottom of your selected ramekins
- Blitz together milk, coconut milk, eggs, vanilla and brown sugar. Strain.
- Pour over caramel in ramekins
- Bake like brulee
