Coconut Creme Caramel – Banh Gan

Ingredients:

Caster sugar
2250 gr
Water
800 gr
Coconut milk
4 kg
Milk
3750 gr
eggs
60
whisked
Brown sugar
1 kg
Vanilla powder
Desiccated coconut for garnish
Lime zest for garnish

Preparation mode:

  1. Make light caramel with 2250 gr sugar and 800 gr water
  2. Pour on the bottom of your selected ramekins
  3. Blitz together milk, coconut milk, eggs, vanilla and brown sugar. Strain.
  4. Pour over caramel in ramekins
  5. Bake like brulee
