Christmas Afternoon tea – Star

Ingredients:

Butter Unsalted room temperature
300 gr
Icing sugar
360 gr
Philadelphia cheese
600 gr
Raspberry puree
200 gr
Gelatin
30 gr

Preparation mode:

  1. Whip butter and sugar
  2. Bloom gelatin in cold water
  3. Combine fruit puree and gelatin in sauce pan, heat up until gelatin has melted
  4. Pour puree over butter and re whip
  5. Add cheese and whip until smooth
  6. Pipe in to molds and cover with sponge
  7. Freeze, take out of the molds and spray.
  8. Finish with gold flakes
