Caramel Poached Apples

Ingredients:

Preparation mode:

  1. Peel apples
  2. Scoop apple balls in to ascorbic bath
  3. Get all trimmings in to deep full size gastro size tray for roasting for puree
  4. Vac pack apples with caramel liquid
  5. Sous Vide at 82C for 30 – 45min, or until tender
  6. Dip cooked apples in to ice bath
  7. Store in refrigerator
