Brown bread

Ingredients:

Wholemeal/brown flour
2 kg
Bakers flour/Strong flour/T65
2 kg
Brown sugar
150 gr
Salt
50 gr
Bicarbonate soda
80 gr
Buttermilk
4.2 kg

Preparation mode:

 

  1. Pour buttermilk to the mixing bowl
  2. Mix dry ingredients together and pour over buttermilk
  3. Mix until well combined (should take up to a min)
  4. Divide in to oil sprayed tins
  5. Flatten the surface with wet hand
  6. Sprinkle some poridge
  7. Mark/cut with the dough scraper in the middle of the loaf length wise
  8. Bake brown bread for 75min at 165c 50% heat/50%steam
