Banana Walnut Cake – Vegan

Ingredients:

Plain flour
3.5 kg
Caster sugar
2 kg
Brown sugar
1 kg
Soda bicarb
3 tbls
Baking powder
3 tbls
Salt
2 tbls
Cinnamon
3 tbls
Vegan buttermilk
1.6 kg
Soy milk + 150gr lemon juice
Banana puree
3.6 kg
Coconut oil
600 gr
Flax seeds
10 tbls
Hot water
150 gr
Vanilla extract
3 tbls
Icing sugar
4.2 kg
Vegan butter
750 gr
Lemon juice
500 gr
Crushed walnuts

Preparation mode:

  1. Combine dry
  2. Make buttermilk
  3. Blend bananas, buttermilk, oil and pour over the dry
  4. Add soaked flaxseeds
  5. Make creamy pastry
  6. Bake at 180C for 30-40min
  7. Cool down before frosting
  8. Sprinkle with crushed walnuts
