Banana and Peanut Cupcakes – Vegan

Ingredients:

Plain flour
2.5 kg
Soda bicarb
100 gr
Brown sugar
1.6 kg
Salt
1 tbls
Cinnamon
1 tbls
Banana puree
3.1 kg
Non-dairy milk
1.2 kg
Lemon juice mix with soda
2 lemons
Coconut Oil
450 gr
Flax seeds + 300 gr hot water
10 tbls
Vanilla
3 tbls
Icing sugar
2.5 kg
Vegan butter
750 gr
Smooth peanut butter
800 gr
Vanilla
3 tbls
Non-dairy milk
300 gr

Preparation mode:

  1. Mix dry ingredients
  2. Combine lemon juice and milk, add soda
  3. Blitz bananas with lemon juice, milk, soda and coconut oil
  4. Combine flax seeds with hot water, let them soak for couple min
  5. Mix all together
  6. Bake at 180C for 30min.
  7. Cool down before icing
  8. For frosting whip up all at once starting slowly
  9. If too runny add more icing sugar
