Banana and Honey Ice-Cream
Ingredients:
Cream
1 kg
Honey
550 gr
Egg Yolk
500 gr
Ripe Banana puree
1 kg
Bleached
Yellow food colour
Ascorbic acid
1 tsp
Preparation mode:
- Blitz bananas with ascorbic acid
- Make creme anglaise with cream, honey and egg yolks
- Pour over bananas, add yellow food colouring and blend well.
- Churn or freeze in paco jet tubs
Used for Hot Chocolate Fondant
