Banana and Honey Ice-Cream

Ingredients:

Cream
1 kg
Honey
550 gr
Egg Yolk
500 gr
Ripe Banana puree
1 kg
Bleached
Yellow food colour
Ascorbic acid
1 tsp

Preparation mode:

  1. Blitz bananas with ascorbic acid
  2. Make creme anglaise with cream, honey and egg yolks
  3. Pour over bananas, add yellow food colouring and blend well.
  4. Churn or freeze in paco jet tubs

Used for Hot Chocolate Fondant
