Raspberry Cheesecake – Vegan

Ingredients:

Pecan nts
1250 gr
Dried dates
500 gr
Coconut oil
200 gr
Salt
pinch
Cashew nut
1250 gr
Raspberry puree
1.5 kg
Maple syrup
600 gr
Coconut oil
500 gr
Agar agar
10 gr
melted in raspberry puree

Preparation mode:

  1. Soak dates for 10 min in hot water and drain
  2. Transfer to food processor and blitz with pecans, 200 gr coconut oil and salt
  3. Set in the frame
  4. Cover cashews with boiling water and soak for 3 hours
  5. Blend cashews and the rest of ingredients in a high speed blender until smooth
  6. Add melted agar agar with raspberry puree while blending
  7. Pour over crumbs and refrigerate
  8. Glaze it if desired – use apricot or neutral glaze.Raspberry napage recipe here
